Curried Sweet Red Pepper Strips

INGREDIENTS

2 pounds sweet red peppers or green peppers or a combination
4 tablespoons olive oil
Salt and freshly ground pepper to taste
1 to 2 tablespoons curry powder

PREPARATION

1. Cut the peppers in half. Scrape away and discard the seeds, white inner veins, and core. Place each pepper half, cut side down, on a flat surface and cut into half-inch crosswise strips (julienne). There should be about 6 cups.

2. Using a very large skillet, heat the oil and when it is hot but not quite smoking, add the pepper strips, salt, pepper, and curry powder.

3. Cook, stirring over high heat about 4 to 6 minutes, or until barely cooked. When ready, the pepper strips should be crisp-tender.
